
Chinese Chicken Noodle Soup
Chicken soup has been hailed as a cure for the flu and any assortment of ailments. Now I have found a recipe that also cures hangovers. It can also be made in honor of the upcoming Chinese New Year.
Ingredients for 4 portions
2 large Chicken breasts
40 gr Dry mushrooms
(Shi-take,Mu-err)
1 small Chinese Cabbage
1 small Onion
2 Ts Sesame oil
2 Ts Soy sauce
60 gr Chinese glassnoodles
1 bunch Green onions
1 ltr Chicken bouillon
Salt
White pepper, ground cayenne pepper
Preparation:
Soak dry mushrooms in lukewarm water for an hour. Cut into any shape or size, not too large. Cut Chinese cabbage in half, then cut into 1-cm wide stripes.Chop onion very fine.Skin chickenbreasts, cut off bones. Slice the green parts of the green onions, the white part you can use for the chicken stock. Cut chicken breasts into 1-1 1/2 cm big strips. Saute onions in sesame oil. Add chicken breasts, saute some more, the meat must be firm but should have no color.
Add Chinese cabbage and mushrooms. Saute for 1-2 minutes. Fill up with chicken bouillon and bring to a boil. Add glassnoodles into boiling soup. Season with salt, pepper and soysauce. Add cayenne pepper. Bring once more to a boil, check seasoning if needed. Sprinkle with sliced green onions and serve.
Note:
Use cayenne very carefully, but the bigger your headache or hangover the more spice you can add. Cayenne is an excellent anti-hangover-cure! Use the skin from chicken breasts with other bits and bones as stock for your chicken bouillon.

Type of drink: short drink
Glass: cocktail glass
Preparation: shaker
Garnish: orange peel spiral
Cognac 2/6 2 cl 2/3 fl oc
Chartreuse, 1/6 1 cl 1/3 fl oz
yellow
Apricot 1/6 1 cl 1/3 fl oz
brandy
Orange juice 2/6 2 cl 2/3 fl oz
Orange bitter dash
Put all ingredients into a shaker with a few ice cubes. Shake for a minute.Pour into cocktail glass. Garnish with orange spiral
